Does anyone know if Roxio's Easy VHS to DVD would allow me to convert a
commercial VHS movie to DVD or would the copy protection be a problem?

I've never used this but 95% sure that it won't allow copy protection.

The burb on the roxio site says

The roxio dongle appears to be just a usb video capture device and
cheaper ones are available for less than half the price. I have a digitus
one from a couple of years ago and from memory (unreliable these days) it
ignores macrovision, which my ATI AIW 9000 capture card certainly does.
not.

For authoring a dvd, might not be as fancy as roxio software but DeVeDe
works and is free.
