Unless you are talking about an HD DVD, the video stream will
be MPEG2. It will be multiplexed with audio stream(s) and subpicture
stream(s) into .vob files.
There are now a number of programs that can read a .vob file
and extract the streams you select. Most will extract to a DVD
compliant .mpg (MPEG program/system, encapsulation) or .mpv
& .mpa ES files, compatible with a DVD Authoring program.
