  Overcooked they can be rubbery. It also depends on whether they are dry &lt;br&gt; pack or the cheap ones soaked in phosphate solution. I&#39;ve never had them &lt;br&gt; without some texture. A good sea scallop is smooth, but chewable. Dry pack &lt;br&gt; can be eared on the outside too. The waterlogged ones won&#39;t sear.
